Budget-Friendly Easy Carne Guisada


two days ago i was putting something away in our big freezer outside, and i came across a package of stew meat. i took it out, thinking i'd like to make carne guisada, even though i'd never made it before. i looked online for recipes, and came up with this one.




i modified it a little, as follows:

1 lb stew meat, trimmed and cut in small chunks
1 tbs garlic, minced
1/4 tsp garlic salt
1/4 tsp ground black pepper
1/2 tsp plus 2 tsp cumin
1/2 onion, diced
3 cups beef broth
1/8 c. flour
1/4 c. cornstarch
1 can ro*tel diced tomatoes and green chilies

I laid my meat out on wax paper, sprinkled ont he garlic salt, pepper and 1/4 tsp cumin and rubbed it in. Then i put the meat in my crockpot and put in the garlic, remaining cumin, and ro*tel. i mixed the flour in well with the beef broth and added to crockpot. Cooked on high 6 hours, then mixed cornstarch with small amount of water, added to crockpot, and cooked 30 more minutes. Result: DELICIOUS!!! Not to mention super easy, and it was fantastic to come in from an all-day wretched shopping excursion and smell dinner almost ready. This is also a great budget-friendly recipe. After I shopped with coupons and sales, this cost roughly $3.50, and we served it with flour tortillas ($1 for 8) and Uncle Ben's Sante Fe Style Ready Rice (FREE after coupon). This would easily feed four, though you might need more rice. Enjoy!
