Meal Plan Monday

the weather outside is frightful.  okay. not really, but for south texas, it's been pretty dang cold this winter!  that means i crave comfort foods.  unfortunately, many of those aren't so great for my waistline!  planning our menu ahead of time helps me stick to a less unhealthy eating plan!

monday - minestrone with deer sausage and kale

tuesday - roast chicken stuffed with broccoli, rice and cheese

wednesday - tomato basil soup (see recipe below) and grilled cheese sandwiches.
 
thursday - leftovers

friday - date night/valentine's day.  i'm making M choose the restaurant.

saturday - we'll probably go out to eat again

sunday - chicken and sausage jambalaya

Tomato Basil Soup (the slightly healthier way)

28 oz can crushed tomatoes
14 oz can diced tomatoes
28 oz chicken broth
1 tbsp dried basil or use about ten leaves fresh, slivered

Add to large pot, bring to boil, then reduce heat and simmer 20 minutes.  Use handheld stick blender to puree.

Add 1 cup heavy whipping cream (i use evaporated fat free milk)  and 1/2 stick butter or margarine.  Add salt and pepper to taste.  Heat until warm but don't boil.

Enjoy!   This makes about 6 bowls.

I haven't had tomato basil soup since we bought a jar of La Madeleine's & I was able to read the "nutritional" data! Your recipe sounds good, I'll give it a try!
