Eat from the Pantry Challenge - Final Week Ahead




We've done well on the challenge since my last post, and in general we're doing better at eating leftovers and not throwing out food.

During the last week we've had ground turkey enchiladas, manicotti with meat sauce, baked potato soup, and roast beef with carrots and potatoes. All the leftovers have been eaten except one enchilada, which i plan to go heat up after this post!

This week is a bit crazy because i have a huge professional exam on tuesday morning, and i have a lot of studying to do between now and then. fortunately, M is great about cooking. right now we have indian butter chicken in the crockpot, which we'll eat with frozen green beans and jasmine rice. we didn't really have a plan for diner except that M is in charge, but this is what i woke up this morning craving.

The rest of the week includes the following:

Chicken, spinach and corn enchiladas verde, with mexican rice

BBQ ribs (these were grilled last summer and vacuum-sealed for the freezer), green beans, baked potatoes

Dinner out on tuesday to celebrate my being done with the audit exam!!!!

as for shopping, last weekend M bought celery, sour cream, and a small bag of cat food on one trip, with no coupons. sunday i sent him to kroger with a list and a stack of coupons to get items that would end up being free. ummmm . . . not quite the most successful shopping trip. the good news, though, is that we had a gift card from transferring a prescription, and he used that to pay. yesterday we went to Randall's, as I had a $2.50 OYNO cat set to expire. we got only items that were free after coupons except for 5 breakstone cottage cheese doubles. i used my OYNO cat, and another $2.07 on a gift card, but i got back a $5 OYNO and a $1.50 OYNO. M will use those today to get milk and sugar, both of which we are out of, and an onion as we used all we had for tonight's dinner.

the rotten thing about this challenge is, even though i've only bought a few frozen things (on my free after coupons shopping trips), our freezers are still full! i definitely think we'll be extending the challenge through february.
